Gelatin is a mixture of peptides and proteinsproduced by partial hydrolysis of collagen extracted from the skin, bones, and connective tissues of animals such as domesticated cattle, chicken, pigs, and fish. The worldwide production amount of gelatin is about 375,000–400,000 tonnes per year (830×106–880×106 lb/a).[8] On a commercial scale, gelatin is made from by-products of the meat and leather industries.
