An aldehyde is an organic compound containing a functional group with the structure −CHO, consisting of a carbonyl center (a carbon double-bonded to oxygen) with the carbon atom also bonded to hydrogen and to an R group,. The group—without R—is the aldehyde group, also known as the formyl group. Many fragrances are aldehydes.

Aldehydes are organic compounds characterized by having the functional group -CHO (formyl) .A formyl group is obtained by separating a hydrogen atom from formaldehyde. As such it has no free existence, although it can be considered that all aldehydes possess a terminal formyl group.
The aldehydes are named as the corresponding alcohols, changing the -ol ending by -al.Etimologically, the word aldehyde comes from the Latin scientist alcohol dehydrogenatum (dehydrogenated alcohol).
Examples:
Butiraldehyde or Butanal has a very characteristic apple aroma, which is why it is used as a synthetic aroma in foods. In addition, it is used for the production of rubber accelerators. It also acts as an intermediate reagent in the manufacture of plasticizers, solvents and alcohols.
