Lets look at a simple home thermostat. They take two dissimilar metals I think it is Brass and steel, bond them together. Form it into a coil and place a Mercury switch at the end. As the coil warms, or cools, it tries to wind/ unwind, causing the switch to rock and make the circuit. That causes the heating/cooling plant to work. A classic example of this.
