Obtaining Maltose :-

Maltose is also known as malt sugar (germinated & dried).

Mostly, Barley seeds produce malt.

We make , maltose by a process know as partial hydrolysis of starch by diastase{an enzyme } found in malt.

  • One mole of Maltose it produces Two mole of D-Glucose.

  • It is a reducing sugar.

  • It reduses Tollen & Fehling solution.

  • Both glucose are of pyranose form.

  • C1 of one glucose unit is linked to C4 of the other.

Maltose = C12H22O11
