First, the root hair cells absorb water through osmosis. The water continues to move down the water potential gradient, through the cells of cortex till the xylem vessels. This happens because the xylem vessel is the least concentrated with water. According to the definition of osmosis, it says "movement of water particles from high water potential to low water potential through a partially permeable membrane".
