The men don't really know how to make Irish stew, and that's where the humor comes in. They failed to peel the potatoes, and then added anything else they had available from vegetables to leftovers. Montmorency even brings a dead water-rat as a contribution. To add to that humor...... Harris actually wants to add the rat!
