■In interstitial impurity defect, the impurity of cation is present in the interstitional position and make crystal defected. Stainless steel is an alloy of Iron and Chromium mixed with it. ... Carbon will therefore tend to occupy interstitial sites in the iron lattice.

The impurity defect in stainless steel is known as the interstitial impurity defect.
It is because in stainless steel, which is an alloy of iron and also containing other impurities such as carbon, manganese, etc.in small amounts, carbon being smaller in size as compared to iron takes the position of the interstitial spaces in the crystal lattice of iron, thereby introducing impurity defects.
The diagram has been attached here for a better understanding of the concept.
