soaps are sodium and potassium salts of long chain carboxylic acid ond end is ionic while the other is hydrocarbon end. when a soap is applied it get into formation that ions are facing outside since they are soluble in water whereas the hydrocarbon end face inside towards the dirt and form a emulsion called micelle and when they are washed since the dirt is completely surrounded by the micelle the dirt along with micelle get washed away .
