When soap is added to water, then the fatty acid ionic part aggregate to form spherical cluster, this spherical cluster is known as Micelles.

When grease dirt or oil is mixed with soapy water the soap molecules arrange themselves into tiny clusters called micelles. hydrophilic sticks from water while hydrophobic stays away from water.
