Explain osmosis while preparing pickle

to make pickles you put cucumbers in salt water for over 2 weeks... in that amount of time the high concentration of salt of the salt water and the low concentration of salt inside the cucumber need to even each other out so through osmosis the salt diffuses through the membrane...and there you have a pickle!

OSMOSIS-
the spontaneous flow of solvent molecule from low concentration to high concentration is called osmosis.

it is of two types-
EXOSMOSIS
ENDOSMOSIS.

example- while preparing pickel when we put some salt on the pickel it releases water this happen due to osmosis the concentration around the pickel is high than that of inside so it moves from low to high(from inside to outside)of the pickel.

SOME MORE EXAMPLE OF OSMOSIS
when we put some salt while preparing food.
put potato in a hypertonic solution.
put potato in a hypotonic solution.

EXAMPLE OF OSMOSIS AROUND US
when put our hand in a mug filled with water after sometime it shrinks,due to osmosis.
plant take water through roots with the help of osmosis,gaseous exchange in roots with help of osmosis.

When ever we prepare pickle, it is necessary to dry the particular food item for preservation purpose. Due to this water present in cells get evaporated making the cells dry. As put the food item in oil along with spices the solution becomes concentrated, the process of Hypotonic osmosis occurs. Molecules from Hypotonic solution enters the cells. That why even after drying the raw mango, when we make pickle out of it and leave it for a few days, we feel the pieces of pickle to be tender and moist.
