The oxidation of fats and oils to products having unpleasant taste and smell and making the food unfit for eating is called rancidity.

When fats and oils are left open for sometime, they start giving unpleasant smell and taste. Then it is said that food has gone rancid. This phenomenon is called rancidity.

When a metal is attacked by the substances around it such as humid air, acids, etc., the metal is said to corrode and this gradual process of eating up the metals is called corrosion.

It is observed that iron articles are shiny when new, but they got coated with a reddish brown powder when left open in air for sometime. This process is called rusting of iron. During rusting of iron, iron metal gets oxidised by the oxygen of air in the presence of moisture. Formula of rust is

Fe_{2}O_{3}.H_{2}O

The number of water molecules (x) in the rust is not fixed rather it varies.

It is important to know that rusting of iron is a redox reaction.
