Starch is a polysaccaride made up a mixture of 2 glucose compounds ; amylose and amylopectin. The amylose is a long unbranched glucose chain which makes it more compact. but amylopectin is a polymer which contains many branches so glucose molecules can be broken down rapidly and release energy for quick actions
