Simply, absorption of water from the small intestine is caused by osmotic gradients ; meaning that osmosis occurs between the food and the villi and the intestines absorb nutrients.

But, since the cholera produces a toxin which releases chloride ion, it creates an osmotic gradient that causes water and nutrients to flow in the opposite direction.

So, net fluid secretions from the walls of the intestine results and leads to the loss of water and salts from the body in the form of diarrhoea.
