In curd,there is lactobacillus bacteria present which convert lactose into lactic acid.Acid taste sour so curd tastes sour.In a bowl of warm milk,a little amount of curd is poured beacuse it contains lactobacillus and lactobacillus reproduce themselves and increase there population.Warmness give them favourable conditions to reproduce well.
