Soaps are molecules in which the two ends have differing properties one is hydrophilic that is it dissolved in water and other if hydrophobic that is doesn't dissolve in water it dissolves in hydrocarbon. When these molecules comes in the contact with dirt or oil they form a structure micelles which is removed when washed with water and thus dirt is removed.
