The minor components include mono- and diglycerides, free fatty acids, phosphatides, sterols, fatty alcohols, fat-soluble vitamins, and other substances. A triglyceride is composed of glycerol and three fatty acids.

A triglyceride is an ester derived from glycerol and three fatty acids.Triglycerides are formed by combining glycerol with three molecules of fatty acids.the glycerol molecule has three hydroxyl groups.Each fatty acids has a carboxyl group.In triglycerides  the hydroxyl groups of the glycerol join the carboxyl groups of the fatty acid to from ester bonds.
