When the acceleration is constant (positive), and the initial speed of the particle is zero, the rate of the particle will increase linearly as expected through the equation:

v = u + at

Since u = 0

v = at

the rate of the particle will increase linearly with respect to time. The slope of the graph will supply the value of acceleration.

2) velocity-time graph with some initial velocity and uniform acceleration:

If the acceleration isn't always uniform the graph will now no longer be instantly lined, it will likely be a curve, the nature of the curve relying on the character of the variant of the acceleration.
