The Salivary glands are found in our buccal cavity. There are three pairs of salivary glands found which are parotid glands, Sub mandibular/maxillary and sub-lingual glands. These glands help in the chemical digestion of carbohydrates especially using enzymes.

✺Mechanism of digestion in mouth
When we eat food, the food is mixed with saliva. The saliva mixed food is known as bolus. The human saliva contains an enzyme known as Salivary Amylase(Ptyalin) which partially digests the starch into simple sugar that is a diasaccaride known as Maltose. Also the tongue releases lipase which help in break down of tryglycerides further in the alimenatary canal.Thus the digestion of starch starts in the mouth itself. The ptyalin is a α-amlyase secreted by parotid glands especially. The conversion of starch into simple sugars can be shown by:
The Salivary amlyase works best in PH of 6.8 but starts to deactivate when goes under 4, Hence much acidic food is harmful to mouth ,also it causes tooth decay. The Salivary Amlyase also contains a hydrolytic enzyme called lysozyme and a lot of water.
The Saliva doesn't have any type of proteolytic enzymes, thus the digestion of proteins starts in stomach only.
↪As the food remains for some time in mouth, thus the digestion remains incomplete.
