Rancidity: When the substance containing oils and fats are exposed to air they get oxidised and become rancid due to which their smell, taste and colour change. This process is known as rancidity. For example when a when butter is kept open for a long time then its smell and taste gets changed.

An amphoteric oxide is one that can act as a base or as an acid. ... This oxide reacts with base and acid to produce salt and water as the main products. Amphoteric oxides react with both acids and alkalis to form salt and water. Examples of amphoteric oxides are zinc oxide and aluminum oxide.

Rusting, the formation of iron oxides is a well-known example of electrochemical corrosion.

(b) Rancidity refers to the spoilage of food in such a way that it becomes undesirable and unsafe for consumption. It is the hydrolysis or autoxidation of fats into short-chain aldehydes and ketones which are objectionable in taste and odour.

When rancidity occurs in food, undesirable odours and flavours can result. In some cases, however, the flavours can be desirable (as in aged cheeses).

2)Metal oxides which react with both acids as well as bases to produce salts and water are known as amphoteric oxides. Many metals (such as zinc, tin, lead, aluminium, and beryllium) form amphoteric oxides or hydroxides. Amphoterism depends on the oxidation states of the oxide.
