Hey user ...
So there is a bacteria Lactobacillus that's response for the curdling of milk /coagulation of milk protein casein .
When the starter/inoculum is added to milk ,then the bacteria starts coagulating the casein and the curd forms .It needs an optimum temperature for the curdling .
