Greenwich has been assigned as zero degree longitude and all other places in the world have their standard time based on this reference. The world map is divided into 360 equidistant longitudes which correspond to 24 hours. So 1 hour is like 360/24= 15 degrees.

Now coming to your question, Indian Standard Time is calculated from the longitude reading of Kolkata (more specifically Mirzapur). See Kolkata’s location reading and it says 88.22 degree east. Now, for 15 degrees it is 1 hour, so divide 88.22degrees by 15 degrees/hour which will give you a value of 5 hours and 48 minutes. For convenience, this is taken 5 hours 30 minutes, which is your answer.

In short, it is because of the longitude reading of the reference place of any country in the world, which in our case is Kolkata for India.
