food when reaches the stomach the bile salts help through emulsification.in the small intestine when pancretice juices like lipase is mixed the fats are broken down into fatty acids and glycerol.  Then through the inner lining of the small intestine nutrients are absorbed and assimilated all over the cells in the body through the blood stream
