The digestion of the food starts when the food enters the mouth or the buccal cavatiy.

The buccal cavity contains salavary glands , tongue and set of teeth.

Starting with teeth:-

Teeth are very important part of buccal cavity.
There are 4 types of teeth present in our mouth or the buccal cavity. The typrs are listed as(below):-
1) Incisors
2) Cannine
3) Pre Molars
4) Molars.

These are in a ratio of 2:1:2:3

Now,
These teeth help in chewing and grinding of food . Thus help in easier conversion of the food such that it can be further simplified.

Next comes the tongue:-

Tongue has various taste buds which helps in determining the taste of any food particle.

Next is salivary glands :-

These play a vital role in the digestion of the food.
Salivary glands produce saliva which is the main component which starts the digestion of the food in the buccal cavity.
Saliva contains an enzyme named as salivary amylase which helps in pre partial digestion of food.
This enzyme convertes few protein molecules into simplified protein matter and also it converts few carbohydrate and fat molecules into simplified sugar and fatty acids including the glycerol.

This way the digestion of the food starts in the buccal cavity itself .
The main component which is responsible for this is the enzyme present in the saliva.
