Rancidity is a process through which food containing fat or oil releases unpleasant odour and tastes bad owing to deterioration.

The deterioration happens due to the oxidation of fats.

In foods like bread, potato chips and cake taste is added in the form of fat or oil which undergoes oxidation producing unstable molecules.

This type of rancidity is called oxidative rancidity.

The other two types of rancidity are hydrolytic rancidity and ketonic rancidity.
