When food material containing oil or fats are exposed to the atmospheric oxygen for a long period of time, it gets oxodized and becomes unfit for consumption..Its taste changes and usually becomes bitter and it also gets foul smell..This change is called rancidity..

Example: 1.When oil used beforehand is stored for long period it becomes rancid.

2.When pakode are left open for some hours they show rancidity.

Ways to prevent rancidity:

1)Store the oily food in air tight container to slow down rancidity.

2)Use antioxidants.

3)Store the food in refrigerator.

4)Replace the oxygen from the container containing oly food with any other gas.
