I don't know about security systems but can tell you about induction stoves.
When a plate is kept between two magnets of opposite poles and is moved, according to Faraday's law, current is inducted in it even though the plate is not connected to a wire. The current flows in the plate itself and thus the circuit is complete. this current is called eddy current. Since a current is flowing through the plate, the plate's material acts as a resistor and thus because of joules heating effect, heat is generated. This is the basis of working of induction stoves.
