⏪RANCIDITY: when oils and fats containing food are kept in open, their smell and taste change i,e they become RANCID. This is known as RANCIDITY.

⏪Ways to prevent RANCIDITY:

➡Keeping in Air Tight containers

➡Flushing with Nitrogen

➡Refrigeration .

➡Addition of Antioxidants .
