Helps to spot trends or patterns, like increasing boiling points etc. It is an easy method of representation, and is easier to understand than text, and can be used as structural evidence to support conclusion. Moreover it can help to identify anomalies ( suppose, all points lie on a straight line except one, then there is a possibility that that value which doesn't lie on the same line is wrong). Anomalies can be corrected by repeating the experiment a few times, which leads to more precise conclusions.

Hope this helps:)
