Alkynes when treated with water gives alkenols which further tautomerizes to form ketones.
RC≡CH + H2O —> [ RC(OH)=CH2 ]
[ RC(OH)=CH2 ] —> R-CO-CH3
As the ketones are stabilized by tautomerization, they don't undergo further hydration.
Thus, when water is added to alkynes instead of diols, ketones are formed.
