cows are ruminants and have four stomach chambers enabling them to digest grass. Humans aren't the only creatures who have difficulty digesting grass – dogs sometimes eat grass when they are feeling nauseous. It helps them to vomit as they are unableto digest this substance.

Because we have lack of celluose digesting enzymesHumans, unlike cows for ex. don't have the necessary bacteria in their intestines that make the enzymes(cellulases) necessary to breakdown the 1-4 beta glucose bonds. So we cannot break down cellulose into its constituent glucose molecules as we do with starch.
