The crystalline structure of sucrose breaks down and the molecules decompose into glucose and fructose and then lose water and then become isomers and polymerize to form caramel, a red-orange colored solid at room temperature

sugar is made up of carbon ,hydrogen oxygen atoms . when heated over the candle these element react with fire to turn into liquid the heat cause a sugar atom to combine with oxygen in the air forming new group of atom
