The reason is that it takes energy to take a molecule out of the liquid and make it a gas.The heat is usually taken from the fluid. One mechanism is that the hottest(fastest moving) molecules are the ones that leave, leaving colder(slower moving) molecules behind. We can take the example of sweating. Sweating is one way by which your body keeps itself cool. Simple reason for it is, sweat evaporates by raking or absorbing energy and then it evaporates. This is how evaporation causes cooling.
