This is because Stainless steel is an alloy of iron, even though it has a large quantity of Iron the redox reaction that occurs in the presence of moisture does not effect the iron in any way as the other metal present in the mixture (alloy) forms a layer of oxides on the surface of iron hence protecting it from the moisture.
