IN our mouth a enzyme called salivary amylase is secreted which breaks complex chain of sugar into simple glucose molecules ....it is just a process of a body after that left over sugar is breaked in small intestine a enzyme called pancreatic amylase is secreted by pancreas which converts complexx sugar into glucose.....it means breaking of sugar into starch form..

Start digestion in the mouth happens by the enzymes called salivary amilase or ptyalin. This enzyme will be active in only basic medium that's the reason the carbohydrates or starchs digestion ceases when the food reaches to stomach.
