Baking was a profitable profession in Goa for a number of reasons:
- Baked goods were part of the daily food- The baker used to visit each household not once, but twice a day. Loaves of bread were bought for the elders while the bread-bangles were a favourite with the children.
- Baked products were essential during celebrations- Various baked goods were traditionally a part of festivities. For example, ‘bol’ was consumed during marriages, while bread was ordered for feasts and parties. During the Christmas season, people ordered cakes and ‘bolinhas’.
- The author says that the baker’s family and even the servants of his household ‘looked happy and prosperous’ and that they ‘never starved’.
This shows that the baker’s business flourished because he supplied products for daily consumption and during festivities.
