Emulsification is the name of the reaction.The process involves the breakdown of lipids in the small intestine. They are broken down into smaller lipid globules to ease their digestion in the watery environment of the small intestine.it is facilitated by bile which is secreted by  the liver. This process of breaking down lipids into smaller lipid globules is called emulsification.
