In the formation of metal carbonyls, metal acts as electron pair accepter and Carbonyl ligand acts as electron pair donar.Carbonyl is a pi acid ligand. So during formation of metal carbonyls, two types of bonds are formed between metal and ligand.
Net result is the number of electron pair accepted by metal is equal to number of electron pair donated to ligands in backbonding.Hence in carbonyls oxidation state of metal is zero.
In fact this happens in all compounds involving carbonyl
