Chewing adds saliva in the food , which converts the starch into sugars.

When iodine is added to the boiled rice , it turns to blue- black colour because of the presence of starch in it .

But the colour of chewed rice remains unchanged as the saliva (salivary amylase) acted on it and starch got converted into sugars.
