Because different foods contain different vital nutrients for us humans, and we have to eat all of them. Ex: vitamins, protein etc.

Food should be a mixture of items in order to provide for the different nutritional requirements of the body. Different foods have different nutrients and thus continued consumption of one kind of food item often leads to deficiency diseases.
A body that receives a variety of nutrients has a stronger immune immune system too.
