In my experience it matters. I get better crystallinity when it goes continous. The fact that you stop the heating doesn't mean that the reactions has stopped. You may be forming more nucleous during the time you are not heating. Additionally, the ramping temperature can affect your results as well. Gelation can occur in some systems.
