Let me congratulate you as you have been thinking of opting IAS (Indian Adminstrative Service) as your career ;IAS is a 'A' Category government sevice which is highly respected and a highly special government service in India.

really,love this question Govind !!
actually, i too want to be IAS officer. i had too many confusions. but i am now clear after discussing many great humans.

I don't want to talk with syllabus. you can easily know this is google or any sites.we see subject wise which is best for it

1.) SCIENCE - as you know that science is the only one subject in which you can gain 100%. but this is not good for all students. if you are real lover of science then please take science in 12th.

you know if you are doing class 12th with science, you have many oportunities , if you remember maximum IAS qualifier with science, for scoring this is not only better, according to me this is the best. because you have no require too memorising, remembering, etc in science, it is best on concept.apply it and gain full mark.
I am also in 12th with math (phy, chem).I observed that if I will read it perfectly. then surely i can gain 100%. now for IAS require better grade in 12th. also better in PT ,mains, interveiw.  for science student PT and  Mains must be easy reason behind the better number you can get in science. now rest interveiw , many institutes are giving idea about it. because NO anyone can say, what will ask in interveiw.
but generally people say that maximum question come with you own subject (means the subject by which you did bachelor degree).

2)ARTS -  I have no experience about arts. but  I know something about it. if you know IAS exam ask all subjects questions.( max question relates with you own subject) this way arts is the best for 12th. because you can make strong general studies by arts.
for science stream students have a powerful demerits is that general studies is weak. but arts student are good in this. so, you can choose arts (humanities ).

3)commerce- commerce is also good subject. it is too scoring. because it is too related with math(statics).but this is good for that type of students who economy, accountancy type complex subjects.  for me its puzzle. so, i can't give you any advice for this subjects.

finally, your answer for me science . it is not only good for IAS exams. it is good for 12th too, if you are give small efforts with it. very nice and scoring.
GAURAV AGRAWAL (IAS TOPPER IN 2013) belongs in science, his one question's answer is very famous ---+---+----=30
1,3,5,7,9,11,13,15  this question is not easy for arts students. but science students it is just a game -- applying math(factorial )

so, this is the power of science.
well, you are in 10th. so, you are too understand which is good or scorer for you. because dream is your then choice  should be yours.
                                                                                     thanks

GovindKrishnan: Thanks! ♥
