The main issue is the pressure per unit area.

Usually we apply same amount of pressures for sharp as well as blunt knife.

Since a sharp knife occupies less area than blunt knife.

As a result sharp knife provides pressure per unit are more than blunt one which has less pressure per unit area ,as it occupies less area.

Sharp knife can effectively cut the fruit because the area under contact via quite small when compared to the blunt knife.
