the mouth have salivary glands which secretes saliva and saliva contains water salt and salivary amylase which help us to break down the starch and turn it into glucose that is easily absorbed by our body then the rest of the food goes down the oesophagus in peristalsis movement and reaches stomach in stomach there are gastric glands which release gastric juices which contain hydrochloric acid , mucus , and pepsinogen ( an inactive form of pepsin which requires acidic medium to become active) hydrochloric acid provides acidic medium to pepsinogen and it becomes pepsin which breaks down the protein and make it into maltose which is again the simplest form of protein and easily absorbed by our small intestine then the food reaches in the small intestine and when the food reaches in small intestine the pancreas secrets pancreatic juices which breaks the fat globules and this is the end of the alimentary canal
