  • It moistures the food , so that it can go through the alimentary canal easily. [Alimentary canal has organs that together form alimentary canal : Mouth , Oesophagus (food pipe) , stomach, small intestine , large intestine , rectum and anus.]

  • It breaks complex carbohydrates (starch) into sugar.

  • It maintains the acidic environment of mouth to prevent bacterial infection.
