The electromagnet attracts thearmature which is also made ofsoft iron. As the armature moves towards the electromagnet, it causes the hammer to strike thebell. ... The soft iron core loses its magnetic field and releases the armature which springs back to its original position.

The operation and repeated use of electric bell required that the core does not get magnetism, but loses its magnetism immediately on release of the switch.
The magnetic attraction of operating part is needed only for the short duration each time a contact is made. It should not get magnetized over time. At the same time, it should develop magnetic attraction for the duration of contact. Soft iron is the best material with these properties.
