Fungus infection does not occur in jams and pickles. why?​

Pickles and jam are highly concentrated. In pickles, vinegar act as antibacterial solution and the higher concentration of salt in turn inhibits the growth of microbes. Similar is the case with jams which is highly concentrated with sugar. Moreover they are to be kept airtight just to reduce their reaction with oxygen and hence rancidity. This is the reason why they don't get spoilt easily.

yes fungus not grow on pickle because we add vinegar or lactic acid in it which prevent growth of fungus on pickle
