Answer: starch is a complex carbohydrate whereas sugar or glucose is a simple carbohydrate. potato has starch which is a complex carbohydrate and needs a lot of time to be metabolised or broken down into simple sugars. sugarcane has simple sugar or carbohydrate in the form of glucose.
