germination grams are considered highly nutritive. what is the reason for this belief?

When the process of fertilization of the male and the female gametes are finished and the embryo has been formed in the ovule, the endosperm formed by the second male gamete with the fusion of the polar nucei supplies the required amount of food which is stored in the cotyledons to the seed during the periods of times when the seed germinates only if it gets suitable conditions for it. When the seeds of gram are kept open in a wet condition or if the are kept in a moist cloth, they start to germinate. Actually, gram seeds are a little sensitive to its environmental conditions so it germinates quickly. During the germination of seeds, all the complex food molecules that are stored in the cotyledons (the endosperm) starts breaking down by the increased activity of hydrolytic enzymes like endo-β-glucanase, α-amylase, protease, etc. This breaks the food down and increases the amount and fatty acids, proteins and other vitamins which are highly nutritious for our bodies.
