Cellulose can be digested by animals like cows but not by humans . The reason being that animals have an organ called caecum with a bacteria e. coli which digests cellulose but humans do not have that organ so we can't digest cellulose.

Herbivore animals can digest cellulose but humans cannot digest it. This is because herbivores have intestines in a certain structure by which they have got the capacity of digesting the cellulose in their stomach.

In human, the enzymes which are used to digest the cellulose are not present so that is why humans can never be able to digest cellulose after consumption, like herbivores animal.
