SAPONIFICATION is process of formation of soap , in this process, & oil or a fat is treated with sodium or potassium hydroxide solution. the fatty acid of the glyceride(ester) is converted to sodium (or potassium ) salt of a acid &glycerol is produced . for eg:
  stearic acid reacts with NAOH to produce soap & glycerol.
       CH2OCOC17H35                              CH2OH
        I                                                        I
       CHOCOC17H35 + 3NAOH -----------> CHOH +3C17H35COONA
        I                                                     I
       CH2OCOC17H35                            CH2OH
